Cover and cook over low heat for about 2 hours.
Add carrots, celery and potatoes and continue cooking for another 40-50 minutes.
Season with salt and pepper and serve piping hot.

It’s even better if made the day before.
Serve with homemade bread, mashed potatoes, or couscous.
For a thicker sauce, let it reduce uncovered for the last 15 minutes.
